Cubeb Pepper
Cubeb, also known as "Java pepper" or "tailed pepper," is a rare Indonesian spice with a unique, complex flavor. Unlike regular black pepper, cubeb combines heat with a subtle bitterness, aromatic pine and citrus notes, and a faint menthol coolness on the finish. The spice gets its name from its distinctive shape — small dark berries with a thin "tail"-like stem attached.
Cubeb has long been prized in Eastern and medieval European cuisine, and today it's experiencing a revival among chefs and connoisseurs of refined flavors. This spice beautifully enhances game meat, fish, sauces, marinades, and adds depth to soups and stews. Cubeb can be used as whole berries (ground fresh just before serving for maximum aroma) or pre-ground.
Recipe: Duck Breast with Cubeb Pepper Sauce
Ingredients:
- 2 duck breasts
- 1 tsp ground cubeb pepper
- salt to taste
- 1 tbsp oil
- 100 ml red wine
- 1 tbsp honey
- 20 g butter
Instructions:
- Score the duck breast skin in a crosshatch pattern, rub with salt and half the cubeb pepper.
- Sear skin-side down in a dry hot pan for 5-6 minutes until golden, flip and cook another 3-4 minutes.
- Let the meat rest for 5 minutes under foil, then slice.
- In the same pan, using the rendered fat, add wine, honey, and the remaining cubeb pepper; simmer until slightly thickened.
- Remove from heat and stir in the butter until smooth.
- Pour the sauce over the duck breast and serve.
