Shiitake Mushrooms (Dried)
Dried shiitake mushrooms are one of the most recognisable ingredients in Asian cooking and the simplest way to give a dish deep, almost meaty umami. Drying concentrates their aroma, so just a few mushrooms are enough to turn an ordinary broth, stew or sauce into a rich dish with a distinctive woodland scent.
Shiitake needs no refrigeration, keeps for months without losing flavour, and makes a handy pantry staple that rescues a simple weeknight dinner.

How to prepare
- Cover the mushrooms with warm water (about 40 °C) at roughly a 1:5 ratio.
- Soak for 20–30 minutes (whole caps up to an hour), until softened.
- Don't throw away the soaking liquid — it is a ready-made mushroom stock. Strain it and add it to your dish.
- Squeeze out the rehydrated mushrooms, slice into strips and use as you would fresh ones.
Recipe: umami mushroom stock base
20 g dried shiitake · 1 litre water · a piece of ginger · 2 garlic cloves · 1 tbsp soy sauce
Soak the mushrooms for 30 minutes. Bring the water and mushrooms to the boil, reduce the heat and simmer for 20 minutes with the ginger and garlic. Add the soy sauce at the end. This stock is the foundation for ramen, miso soup, noodles or risotto — freeze it in an ice-cube tray in portions.
Tip: grind dried shiitake in a coffee grinder to make a natural umami seasoning. Half a teaspoon in minced meat, a sauce or mashed potatoes noticeably deepens the flavour.
