Za’atar is a popular spice blend widely used in Middle Eastern and North African cuisines. The composition of za'atar includes: ground sumac, white sesame, table salt, oregano, marjoram, thyme, ground cumin. Thanks to the combination of herbs and spices, za’atar has a vibrant, fresh flavor with tangy and slightly nutty notes. It is often used to season bread, vegetables, meat, and salads. You can also mix it with olive oil and use it as a paste or marinade.
Recipe: Manakish with Za’atar (Flatbread with Za’atar)
Ingredients:
• Flour — 500 g
• Dry yeast — 1 tsp.
• Sugar — 1 tsp.
• Salt — 1 tsp.
• Warm water — 250 ml
• Olive oil — 3 tbsp.
• Za’atar — 3-4 tbsp.
• Olive oil for za’atar — 2-3 tbsp.
Instructions:
1. Prepare the dough: In a bowl, mix warm water, dry yeast, and sugar. Let the mixture stand for 5-10 minutes until the yeast activates. Then add flour, salt, and olive oil. Knead the dough until it becomes smooth and elastic. Cover it with a towel and let it rise in a warm place for 1-1.5 hours.
2. Prepare the za’atar: Mix za’atar with olive oil to make a thick paste. You can adjust the amount of oil depending on how thick or thin you want the paste to be.
3. Form the bread: Once the dough has risen, divide it into several pieces (depending on the desired size). Roll out each piece into a thin round flatbread about 0.5 cm thick.
4. Apply the za’atar: Spread the za’atar paste over each flatbread, evenly distributing it across the surface.
5. Bake: Preheat the oven to 220°C (428°F). Place the flatbreads on a baking sheet and bake for 10-12 minutes until the edges are golden brown and the tops are slightly browned.
6. Serving: Serve the finished manakish hot or warm. It makes an excellent snack that can be served with yogurt, fresh vegetables, or salads.
