Jerk is a traditional spice blend originating from Jamaica that gives dishes a characteristic spicy and aromatic flavor. This mixture includes: ground garlic, ground onion, table salt, coconut sugar, ground allspice, ground ginger, ground black pepper, ground smoked jalapeño pepper, ground paprika, ground nutmeg, ground cloves, thyme, ground cinnamon. Jerk spices are commonly used for marinating meat, especially chicken and pork, before grilling or cooking over an open flame. They create a juicy, flavorful, and spicy dish that enhances the meat’s flavor and adds a slight smokiness.


Recipe: Jamaican Jerk Chicken


Ingredients:


 • Chicken (about 1.5 kg) — whole or in pieces (thighs, breasts)

 • “Jerk” spice blend — 3-4 tbsp.

 • Olive oil — 2 tbsp.

 • Garlic — 4 cloves (minced)

 • Ginger — 1 cm (grated)

 • Lemon juice — 2 tbsp.

 • Brown sugar — 1 tbsp. (optional)

 • Salt — to taste

 • Chili pepper — 1 (optional, for additional heat)

 • Fresh herbs for garnish (cilantro or parsley)


Instructions:


 1. Prepare the marinade: In a large bowl, mix olive oil, minced garlic, grated ginger, lemon juice, brown sugar, salt, and the “Jerk” spice blend. If desired, you can add finely chopped chili pepper for extra heat.

 2. Marinate the chicken: Rinse the chicken and pat it dry with paper towels. Place the chicken in the marinade and mix well to ensure the meat is evenly coated with the spices. Let it marinate in the refrigerator for 1-2 hours, or preferably overnight for a more intense flavor.

 3. Cooking: Preheat the grill or barbecue to medium heat. Place the marinated chicken on the grill. Cook the chicken for about 30-40 minutes, turning it every 10-15 minutes to ensure it browns evenly on all sides and reaches an internal temperature of 75°C (165°F).

 4. Serving: Serve the cooked chicken hot, garnished with fresh herbs. This dish pairs wonderfully with rice, vegetables, or salads.
