Korean Carrot Spice Blend
A ready-made seasoning for the classic Korean-style carrot salad — the one that delivers that instantly recognisable taste: a rich coriander base, garlic, sweet paprika and a double heat from black and red pepper. We balanced it so the salad comes out right the first time, with no guesswork and no row of separate jars on the counter.
The salt in the blend plays a technical role — it draws the juice out of the grated carrot, which is what makes the marinade work and leaves the vegetable crisp and juicy rather than dry. Coriander goes in at two grinds: fine for immediate aroma, coarse for a visible texture and a longer, slower release of flavour in the finished dish.

Recipe: classic Korean carrot salad (for 1 kg)
1 kg carrots · 37 g blend · 25 g sugar · 30 ml 9% vinegar · 60 ml oil
- Grate the carrots into long thin strips (a Korean-carrot grater is ideal).
- Add the spice blend, sugar and vinegar, then mix by hand, squeezing lightly so the carrot releases its juice.
- Leave for 15 minutes — the salt draws out the juice and the marinade forms.
- Heat the oil until it just smokes and pour it over the carrots — hot oil is what unlocks the garlic and paprika.
- Stir, cover and let it rest in the fridge for 2–3 hours, ideally overnight.
Tip: the same blend works far beyond carrots — try it with Korean-style cabbage, aubergine, soy skin (fuzhu), mushrooms or chicken breast.
