Chicory
Chicory is the roasted and ground root of the common chicory plant, brewed into a natural drink that tastes remarkably close to coffee: rich, dark, with a gentle caramel-and-nut note and a pleasant hint of bitterness. The key difference is that chicory contains no caffeine — you can have a cup in the evening without paying for it with a sleepless night.
It is a long-established alternative to coffee: chicory is drunk on its own, blended with coffee to soften the taste and cut the caffeine, or added to baking and desserts for a deep, dark layer of flavour.

How to brew
- Quick: pour hot water (90–95 °C) over 1–2 tsp of chicory, stir and let it stand for a minute.
- In a cezve: 2 tsp per 200 ml of cold water, heat slowly until the foam rises, then remove from the heat. The result is thicker and fuller.
- Coffee blend: replace a third of your ground coffee with chicory for a softer cup with less caffeine.
Recipe: cinnamon chicory latte
2 tsp chicory · 100 ml hot water · 150 ml milk (dairy or plant-based) · a pinch of cinnamon · honey or syrup to taste
Brew the chicory in hot water. Warm the milk and froth it (with a frother, a whisk, or by shaking it in a sealed jar). Pour the milk into the chicory and dust with cinnamon on top. A favourite evening version of the coffee ritual — without the caffeine.
Tip: add ½ tsp of chicory to chocolate cake batter — it lifts the cocoa and deepens the flavour the way strong coffee does.
