Utskho-suneli is a classic Georgian spice of dark olive hues with a spicy nutty flavor. It is obtained as a result of drying and crushing the pods and seeds-beans of the blue fenugreek (lat. - Trigonella caerulea) - an annual plant of the legume family. In Ukraine, the Georgian spicy mixture Khmeli-Suneli, which includes powdered fenugreek, has become very famous.

A freshly picked plant is not endowed with a pronounced aroma. One has only to dry it, as a miraculous transformation will take place before your eyes: a pleasant nutty flavor appears, and the spice acquires the ability to absorb the aromas of neighboring ingredients.
